HABESHA BREAD (DEFO DABO)

If there is one thing you are certain to find at every The Enset PlantEthiopian household on every Ethiopian occasion, it has got to be Defo Dabo . It is indispensable for every occasion on two major reasons. The first reason is that of symbolism - it is baked in a massive traditional clay pan that gives the Defo Dabo a giant presence at the household signifying that there is an occasion. And the second reason is that since Ethiopians have a tradition of sharing meals with neighbors and friends, at times of festivals and national holidays, Defo Dabo comes to strengthen this tradition because it is baked in large quantity to serve up as many people as possible. But this recipe is for one that is about six times smaller than the average Ethiopian Defo Dabo. So lets make one. 

The Versetile Plant


This plant iis known as Enset or False banana. It can be described to be one of the hallmarks of most rural and some suburban villages of Ethiopia. If we are to compile a list of plants that are likely to be found in the front and backyards of most Ethiopians, Enset will definitely top the list. Its root is high in carbohydrate and can be cooked as porridge or made into traditional bread, which is especially customary during particular festivities. bake it now
