| INJERA - THE STAPLE DIET |

Injera is traditionally made from Teff – a cereal grain that grows in Ethiopia. It constitutes the staple diet all over the country and it comes in a variety of colors ranging from dark and lighter brown to milky white.
The whiter the teff the more it coasts; 100 kg of dark brown teff costs about US $20, whereas the same amount of white teff can be purchased at about $35. It can be bought from most markets in Ethiopia. But if you live outside the country, chances are there is no teff. But where there is no teff, there is wheat and sorghum to help you make some counterfeit injera. And here is how.
