Ingredients Cooking Method
1 kg lean topside meat
250g spiced-butter
1 tbsp powdered hot red chili blend    (Mitmita)
Half tsp cardamom
500g cottage cheese

As in most things in life, best results in the kitchen are achieved as a result of some hard work.

And so the best tasting Ketfo is a result of rather tiring work in the kitchen such as manually mincing the meat. So take the time to mince the topside manually, and as finely as possible.

Once you have the topside minced, melt the butter in a saucepan and mix it well with the minced meat, cardamom, chili blend and some salt to taste.
Some like it very lightly cooked while others find it more delicious when it is not cooked at all.
To enjoy the full taste of this popular Ethiopian dish, make sure you mix all the ingredients well and serve before the butter starts to coagulate.
Add some cottage cheese and chili blend as side dish and serve with Injera.
